Papi Sal's List
This new food cart serving a unique combination of Puerto Rican barbecue and Philadelphia comfort food made with local, organic, and seasonal ingredients soft-opened in the new food cart pod Core (Collective Oregon Eateries) on Thursday. Owner John Hatch, a.k.a. "Papi Sal," is Russian and Puerto Rican and was adopted into an Italian family in Philadelphia. The cart serves a variety of sandwiches on house-baked bread, such as "The Jawn" (slow-roasted Puerto Rican lechon with oregano jus, Puerto Rican barbecue sauce, sofrito mayo, and chicharrones on an Italian sesame seed roll), which is named for an all-purpose Philly slang word meaning pretty much anything, as well as the "Mr. Burns" (a fried egg, sour cream and onion dip or sofrito mayo, and hot roasted peppers on a sesame seed baguette) and a "veggie jawn" (semolina onion rings, portobello mushrooms, vegan Cheez Whiz, sofrito mayo, and sautéed onions on a sesame seed baguette). There's also coconut garlic poached white fish, almojabanas (Colombian cheese bread), and alcapurrias (a popular Puerto Rican fritter dish).

Piccone's Corner List
On Thursday, farmer Austin Piccone opened this new butcher shop and restaurant. The kitchen is helmed by chef Nic Maraziti (who's spent time at Bar Casa Vale List , Ava Gene's List , the Bent Brick List , and Tournant List ) and features a menu inspired by Italian-American and Pacific Northwest flavors, with dishes like arancini, fresh pasta, steak, roasted chicken, mixed grill, braised greens, polenta, and garlic bread pudding, plus a "sausage window" with Italian sausage sandwiches and vegan "shroom dip" sandwiches. The butcher shop offers premium heirloom pork and lamb products from Piccone's own farm Wallow & Root as well as meat from other small local farms, in addition to scratch-made sauces and stocks, pantry items, and other grocery items. House-made salumi products, including n’duja, guanciale, spicy coppa, and finocchio, are coming soon. Currently, the restaurant is takeout only, but indoor seating and a full bar will follow eventually once it's safe.
