Canard Like List
If you've spent any time on TikTok or Instagram recently, you probably know that corn ribs—a trend that involves slicing corn cobs into vertical sections and cooking them so they curl up like ribs—are everywhere right now, and Portland restaurants are getting in on the craze. The dish is a natural fit for Gabriel Rucker's irreverent yet sophisticated Canard, where sous chef Patrick Ayers has created a menu item of corn ribs roasted in black garlic butter and topped with smoked blueberries, piave cheese, and jalapeño.

Lil' Shalom Like List , Shalom Y'all Like List , and Yalla Like List
According to Eater Portland, Sesame Collective (the restaurant group that owns Shalom Y'all and Lil' Shalom) was one of the first in Portland to adopt the corn rib trend: Inspired by a dish created by Momofuku Ssäm Bar executive chef Max Ng, they put their own version on their menu back in 2017. Since then, they've featured it every summer and now serve it at all of their restaurants. The restaurant group poaches their corn ribs in milk and butter, makes a compound butter with the corn-infused cooking liquid, fries the ribs, tosses them in the corn butter, and finishes the whole shebang with harissa and smoky Urfa pepper.

Zuckercreme Past Event Like List
As part of their nostalgic "Mini City Portland Fair Experience Past Event Like List " collaboration with Honey Butter Country Fare, the whimsical monthly themed bakery cafe Zuckercreme is featuring the aptly named menu item "corn two ways": corn on the cob with Newk's Hot Sauce chipotle mayo, paprika, brown sugar, crunchy chili oil, and parsley, served over a bed of Midwest-inspired kettle corn salad.
