Nothing says summer like gnawing on the sweet, juicy kernels of a golden-yellow cob, and corn is at the height of its season right now, so naturally, it would behoove all of us to eat as much of it as we can. The recently reopened Peruvian standby has incorporated fresh corn into several of its dishes, including its ensalada de huerto (summer fruit, corn, bell peppers, grapes, queso fresco, and rocoto-yuzu vinaigrette), cebiche (market fish, sweet potatoes, Peruvian corn, lime juice, and ají amarillo), and gnocchi escabechado (house-made pasta, corn, ocopa sauce, and porcini mushrooms).

Canard
If you've spent any time on TikTok or Instagram recently, you probably know that corn ribs—a trend that involves slicing corn cobs into vertical sections and cooking them so they curl up like ribs—are everywhere right now, and Portland restaurants are getting in on the craze. The dish is a natural fit for Gabriel Rucker's irreverent yet sophisticated Canard, where sous chef Patrick Ayers has created a menu item of corn ribs roasted in black garlic butter and topped with smoked blueberries, piave cheese, and jalapeño.

Dimo's Apizza
The New Haven-style pizzeria is also jumping on the corn ribs bandwagon with its "Italian elote" special, which gives the Mexican street food favorite a Mediterranean-inspired treatment with Calabrian chili, feta, parmesan, parsley, and lemon. They're also featuring a seasonal corn pizza.

Lil' Shalom, Shalom Y'all, and Yalla
According to Eater Portland, Sesame Collective (the restaurant group that owns Shalom Y'all and Lil' Shalom) was one of the first in Portland to adopt the corn rib trend: Inspired by a dish created by Momofuku Ssäm Bar executive chef Max Ng, they put their own version on their menu back in 2017. Since then, they've featured it every summer and now serve it at all of their restaurants. The restaurant group poaches their corn ribs in milk and butter, makes a compound butter with the corn-infused cooking liquid, fries the ribs, tosses them in the corn butter, and finishes the whole shebang with harissa and smoky Urfa pepper.

This quirky pinball bar incorporates elote-seasoned grilled corn into a few of their specials, including their "Cesar Millan: Ensalada Whisperer" (romaine lettuce, Caesar dressing, grilled corn, tortilla chips, and cotija cheese), their "Cactus Jack" burrito (grilled pollo asado, smoked peppers, refried beans, crema, queso sauce, green chile sauce, and corn), and their house arepas (crispy fried corn cakes topped with shredded lettuce, smoked peppers, onions, guacamole, cotija, green chile sauce, and corn).

Zuckercreme
As part of their nostalgic "Mini City Portland Fair Experience" collaboration with Honey Butter Country Fare, the whimsical monthly themed bakery cafe Zuckercreme is featuring the aptly named menu item "corn two ways": corn on the cob with Newk's Hot Sauce chipotle mayo, paprika, brown sugar, crunchy chili oil, and parsley, served over a bed of Midwest-inspired kettle corn salad. The final pop-up this Thursday is your last chance to grab this creative dish (plus other country fair-inspired food) before it's gone for good.
