This New York-style kosher bagel bakery offers a wide selection of customizable breakfast sandwiches named for various historical figures of Portland, from prominent businessman Dan Burnside to women's rights advocate Abigail Duniway. Fillings include eggs, cheese, Tails & Trotters ham, sausage, pork roll, caramelized onions, house-smoked bacon, and more, and you can choose to have your sandwich served on a bagel, bread, or a roll.

The specialty coffee shop sets its breakfast sandwich apart from the crowd with a buttered bolo levedo (a Portuguese bread similar to an English muffin) from Jen's Bagels & Pastries, caramelized organic maple syrup, a fried egg, cheddar, and your choice of bacon or veggie sausage. Originally "Fills Donuts," a bakery specializing in Berliner-style filled donuts, this popular spot from pastry chef Katherine Benvenuti has expanded to Lake Oswego and now offers burgers, fries, and soft-serve ice cream in addition to its signature treats. (The original SW Washington location is currently temporarily closed.) Also part of the newly expanded menu: three different breakfast sandos made with repurposed brioche buns leftover from the donut-making process. Choose from a basic "egg sando" with scrambled eggs and American cheese, the "Fills Original" (bacon and egg scramble with chili aioli), and the "Fully Loaded" (bacon and egg scramble, Tasty sausage, American cheese, pimento cheese, and chili aioli).

It doesn't take long to suss out the primary theme at this popular cafe and truck: All of the egg sandwiches, from the signature "Yolko Ono" (a fried egg, homemade pesto, parmesan, and a hand-pressed sausage patty) to the "Huevo Mutilation" (a fried egg, seared ham, caramelized onions, cheddar, and Aardvark hot sauce aioli), are named for musical puns. They're all served on toasted sourdough bread from Portland French Bakery and are made with locally sourced eggs, which are dusted with a proprietary "Magic Egg Dust" spice blend.
