It's the most wonderful time of the year for beer lovers: fresh hop season! Fresh hop beers are made from hops processed no more than 24 hours after being harvested, resulting in brews with a milder, more botanical profile and less bitterness. And Pacific Northwest craft beer drinkers are particularly blessed: Because of the bounty and proximity of the hops in Yakima Valley and Willamette Valley, it's hard to beat the range of fresh hop beers available in our region. Since these creations are only here for an extremely limited time, we've rounded up a list of brews to try so you can make the most of the all-too-fleeting season. Baerlic Brewing Co.
The "stubbornly independent" brewery Baerlic has teamed up with New Seasons Market to create "Stay Fresh," a California-style fresh hop IPA brewed with Oregon-grown Amarillo and Mosaic pellet hops and fresh Simcoe hops from Coleman Farms. They've also got a few other "freshies" available for preorder, including Punk Rock Time Fresh Hop IPA (a version of their Punk Rock Time IPA with fresh Chinook hops), Pioneer Fresh Hop ESB (an award-winning British-style pale ale, cold-conditioned on fresh Mount Hood hops), and Fresh Hop, Man Double IPA (a version of their Hop Man IPA brewed with Strata and Chinook hops and cold-conditioned on fresh Oregon-grown Citra hops).

Binary Brewing Like List
This digitally-minded brewery recently launched Fresh Install, an unfiltered fresh hop IPA made with Warrior and Strata hops for a "dank, herbal, cannabis-like aroma carrying touches of tropical fruit and strawberries." It's the brewery’s debut fresh hop beer and currently on draft only.

The award-winning brewery has released multiple fresh hop brews, including their Fresh Hop IPA 2021, Fresh Hop Stay West, and Fresh Hop Wanderlust. Double Mountain Brewery
For their 2021 Killer series, the brewery has dropped their Killer Green Fresh Hop IPA ("visions of bright evergreen, blood orange, currant, and lush pine"), Killer Red Fresh Hop IPA ("wonderful ripe apple, juicy forest, and fruited pine flavors and aromas"), and Killer Juicy ("dense tropical rainforest dripping with the sticky, delicious mango, ripe summer peach, light cannabis, and deep orange"). All are made with over eight pounds of fresh Willamette Valley hops in each barrel and are available in 500 ml bottles or on draft.

John Harris's craft brewing project has dropped its annual Astro Fresh Hop Lager, now available on draft. This year's batch is brewed with fresh Tettnang and Hallertau Mittelfruh hops from Goschie Farms. Their annual Altair Fresh Hop Pale Ale is set to be released next.

Since the pandemic spoiled its plans to have an actual birthday party, the Kenton taproom and bottle shop Mayfly has decided to throw an impromptu "Fresh Hops and Hip-Hop Past Event Like List " celebration this weekend for its two-and-a-half-year anniversary, featuring the winning combination of fresh hop beer, dogs, yoga, and music. The festivities last from Friday through Sunday.

Varietal Beer Co. Like List
The Sunnyside, WA microbrewery has released Fresh Twine, a version of their flagship juicy West-Coast style IPA Twine Climber infused with fresh Citra and Comet hops from local Newhouse Farms, available on tap for a "very limited time." They've also got a lineup of several other fresh hop and wet hop brews in the works, which makes sense given they're located in the heart of hop country, so stay tuned for more releases in the near future.

Zoiglhaus Brewing Company Like List
This brewpub inspired by German tradition is now featuring a fresh hop Kölsch, which is brewed with all-German ingredients and fresh Tettnanger hops and fermented with a Kölsch yeast strain that owner Alan Taylor brought back from Germany. It's available in 16 oz cans, four-packs, and pints on draft exclusively at the brewery.
