You can’t go wrong with the local pie heavyweight’s classic strawberry rhubarb pie. Their West Seattle location also has a boozy strawberry rhubarb milkshake, with rhubarb compote, strawberries, fresh bananas, rum, banana liquor, vanilla ice cream, and piña colada.

Amandine Bakeshop
The adorable Capitol Hill bakeshop has been baking up confections like strawberry rhubarb macarons. They also sometimes make a buttermilk cake with rhubarb and candied ginger.

Cafe Flora
The much-loved vegetarian cafe serves a spinach and rhubarb salad with spinach, watercress, fire-roasted asparagus, roasted rhubarb, whipped mint chevre, toasted walnuts, and ginger orange rhubarb dressing, available for breakfast, lunch, and dinner. For brunch on the weekends, they also have rhubarb pepita waffles with a cornmeal waffle topped with rhubarb compote, sweet tahini pepita butter, and pecan granola. At her adorable Greenwood bakery, pastry wizard Rachael Coyle has been busy whipping up baked goods like rhubarb croissants (if you haven't tried one of her croissants, you owe it to yourself to amend this grievance post-haste), rhubarb olive oil Bundt cake, walnut thumbprint cookies with a dollop of rhubarb jam, strawberry rhubarb macarons, a rhubarb galette, poached rhubarb pavlova, and a Victoria sponge (a proper English cake you may know from The Great British Baking Show) with rhubarb jam sandwiched between yellow cake and mascarpone cream.

Frankie & Jo's
The plant-based ice creamery's April seasonal flavor "Tend the Terra" is made with hemp milk with a swirl of preserved rhubarb caramel and cacao nibs.

Autumn Martin's wildly popular molten chocolate cake emporium currently serves a rhubarb bread pudding. They fold vibrant organic rhubarb from Puyallup-based Richter Farms into a vanilla bread pudding, topped with house-made roasted rhubarb jam (made with roasted whole Gaya Farms vanilla beans) and a scoop of vanilla ice cream, and finished with a drizzle of rhubarb rosé syrup. Kari Brunson's health food haven offers a strawberry rhubarb shake (rhubarb, strawberry, date, orange, beet and coconut milk) on their spring menu. Also on offer: warm slices of gluten-free strawberry buckwheat banana bread from Salmonberry Goods, topped with sunflower seed butter, strawberry rhubarb compote, bee pollen, and a drizzle of maple syrup.
