Musang chef Melissa Miranda, who was recognized as one of the best new chefs in America in 2022 by Food & Wine, will visit Bainbridge Island's modern Vietnamese restaurant Ba Sa to prepare a multi-course Filipino tasting menu, with dishes like kinilaw (kombu-cured steelhead), pancit palabok (shrimp and pork ragu, grilled Argentine langoustines, palabok noodles, smoked tinapa, scallions, and eggs), and banana cake with jackfruit sorbet and fried lumpia paper.

The six-course tasting menu is $150/person plus tax and service charge. Wine, cocktails, and beverages will be offered for additional cost. Seatings are offered at 4:30pm or 7pm. Tickets are required.

First Course

Kinilaw - kombu cured steelhead, cane vinegar, black garlic, micro greens


Second Course

Ginataang Alimasag - Dungeness crab, caviar, coconut and squash cream, scallions, black sesame rice cracker


Third Course

Ensaladang Tagsibol - snap peas, green papaya, cherry tomatoes, purple cabbages, fish sauce, dalandan, fried shallots


Fourth Course

Pancit Palabok - shrimp and pork ragu, grilled Argentine langoustines, palabok noodles, smoked tinapa, scallions, eggs


Fifth Course

Bistek - braised then grilled beef short rib, charred onion and coconut cream, charred sweet onions, pickled red onions, scallions


Dessert Course

Banana Cake with jackfruit sorbet and fried lumpia paper
