A few years ago, veteran French-trained pastry chef Toby Matasar switched to a Paleo diet and never looked back. Gluten-free folks, rejoice, for Matasar—who was once pastry chef for Tom Douglas Restaurants, and owned and operated West Seattle’s beloved Eats Market Cafe for 10 years before it closed in 2015—has focused her formidable baking skills on creating an entire menu of panini, toast, and waffles, all made in-house. And all of it is entirely gluten-free!
