Samurai has shoyu and dipping-ramen dishes, but the tonkotsu is the thing—rich, unimpeachably tasty pork ramen with thick, perfectly cooked slices of pork. You can order extra noodles, but you won’t need to. You can order extra pork lard, but you shouldn’t unless you’re a sumo wrestler. Plus, the ID location, with only eight tables, is a small, efficient engine of deliciousness; the U-District one is the best thing that ever happened to a college student.
