From Sophie and Eric Banh (Monsoon, Ba Bar) comes Seven Beef, a modern steakhouse specializing in grass-fed, Northwest-raised beef that’s butchered in-house. Working with whole cows means the menu offers classic cuts of beef such as T-bone and New York strip, but also rare cuts like oyster and teres major. The Banhs also serve “Bò 7 Món,” their take on a traditional Vietnamese seven-course beef dinner. (For vegetarians, there’s a hearty menu called “Seven Beet.”) If the idea of parking your own car is just too much, take note: Seven Beef has valet parking.
