The Swinery
The Swinery—a sustainable full-service deli/butcher in West Seattle (formerly run by rogue chef Gabriel Claycamp, who is no longer involved)—seeks to "bring back the flavor that's been lost with mass-produced factory meats." In the courtyard, also known as the Inner Sanctum of the Temple of Porcine Love, weekday lunch and weekend brunch is served, including hamburgers, house-made sausages, hot and cold meat sandwiches, poutine, and tallow fries.
