Xi’an Noodles specializes in biang biang noodles, wide, handmade noodles that are a speciality of China’s Shaanxi province. If you’re lucky you might catch a glimpse of Xi’an’s chefs slapping dough against the counters to create the noodles (the name “biang biang” comes from the sound the dough makes as it hits the hard surface). Noodles here are available with a variety of toppings including hot chili oil, “spicy tingly” beef, stewed pork, and cumin lamb.
