Filipino American chef Carlo Lamagna, who cooks his native cuisine—like adobo and lumpia Shanghai—at the Portland restaurant Magna Kusina, will come to Bainbridge Island as the latest guest at Hitchcock's pop-up series. He'll be slinging dishes like Longipan (longanisa on a pandesal roll with grilled cilantro relish), Arroz Caldo (chicken and rice porridge with chicken skin chicharrons), crab fat noodles, and Ginataang Kalabasa (fire-roasted kabocha squash in spicy coconut broth).

Longipan - Longanisa on a pandesal roll with grilled cilantro relish

Arroz Caldo - Chicken and rice porridge with chicken skin chicharrons, fried garlic, scallions, and calamansi

Crab Fat Noodles - Dungeness crab, crab fat sauce, squid ink noodles, pickled corn chow chow

Ginataang Kalabasa - fire roasted kabocha squash, spicy coconut broth, roasted pumpkin seeds, bitter greens

Inihaw na baboy - grilled pork chop marinated in soy sauce and calamansi, served with rice and atcharra
