Chef Brendan McGill of Hitchcock
has opened Bar Taglio, a Roman-style bar and pizzeria, inside downtown Seattle's historic building The Exchange. Guests will be able to purchase Roman-style pizza al taglio
("by the cut") with toppings such as salami, bologna, chanterelle and lobster mushrooms, "carbonara" (guanciale, onion, black pepper, and egg yolk), and potato rosemary. Drinks include Italian wine and cocktails like Negronis Americanos, Bellinis, and Sgroppino, as well as other libations made with Italian liqueurs, aperitivi, and amari.
