Located in a former hardware store on Bainbridge Island, Bruciato ("scorched," in Italian), serves up pizzas and other fare loyal to the Naples region of Italy. Owner and Chef Brendan McGill takes care to replicate his menu so that it reflects the authenticity of the region. Case in point: he cures his salumi in-house, sources ingredients from Campania, Italy, and ferments his masa for three days before it becomes dough.
