Chace’s, an Eastside standard since 1958, is a PANCAKE CORRAL. It is a CORRAL of PANCAKES. If you do not already want to go to there, be further advised that wagon wheel chandeliers hang from the ceiling of the cozy one-room rambler, and old photos, watercolors, and crayon drawings crowd the walls; the sometimes-gruff-but-mainly-sweet waitstaff know the dozens of regulars personally. The food, served with a minimum of fuss, is just plain good: not fancy-good, just good-good. The place is nearly always jam-packed—maybe because Chace’s prices haven’t changed since Bellevue was full of motels and cheap gas. Expect a wait on weekends and after 8 am on weekdays.
