With “two years of experience working in a commercial bakery,” the duo behind Roxy’s Waffle Wagon—neither of them named Roxy—make sweet and savory waffles, including their version of shepherd’s pie (a potato waffle with ground beef, vegetables, and sour cream) and a buttermilk waffle topped with salted caramel gelato from Sirena Gelato in Kirkland. They keep a separate waffle iron for gluten-free orders, using rice flour.
