Rubinstein Bagels
Many Seattleites scorn the city's dearth of quality bagels, but baker Andrew Rubinstein is aiming to change that with his bagel company Rubinstein Bagels, where he makes long-fermented, kettle-boiled, hand-rolled, stone hearth-baked bagels with a sourdough starter. His tagline: "These are the bagels you've been looking for." He's opened a new shop near the Amazon Spheres. The menu includes bagels (of course) in flavors like shallot, rosemary salt, and jalapeΓ±o white cheddar, as well as coffee and bagel sandwiches. There's also duck fat matzo ball soup and a soup of the day.
