The demise of Andy Ricker's legendary Thai franchise Pok Pok was one of the COVID-19 restaurant casualties that hit hardest in 2020, but all is not lost. In December 2020, ChefsTable revived the chain's "Thai izakaya" spinoff Ping as a delivery-only concept in the former space of Holdfast Dining. Chef Michael Kessler, who previously took over the restaurant when Ricker left in 2011, is overseeing the menu, which consists of some of the restaurant's greatest hits that are most suited to takeout, such as yakitori skewers, kha muu thawt (Thai braised pork leg), and noodle soups.
