Last month, this sushi spot debuted downtown, with a menu of appetizers, salads, bento boxes, sashimi, nigiri, sushi rolls, donburi, yakisoba, and teriyaki, hot and cold sake, and desserts like mochi ice cream and tempura cheesecake.

Casa Colima Mexican Restaurant List
This family-owned Mexican restaurant, which operates locations in Hillsdale, Tualatin, and Vancouver, launched a new outpost in Happy Valley in late January. Dishes include tableside guacamole, ceviche, chimichangas, street tacos, burritos, enchiladas, fajitas, and more.

Hokkaido Sushi Bar List
Another new sushi joint: This restaurant opened in Vancouver at the end of January and serves nigiri, sashimi, yakisoba, udon, and specialty rolls like the "Clackamas Roll" (shrimp tempura, asparagus, spicy salmon, spicy mayo, and eel sauce).

This non-profit neighborhood coffee shop from Diaspora Coffee & Chai Co List soft opened in East Portland on February 1. The establishment, which serves coffee, chai, bagels, and baked goods, aims to help immigrants and refugees learn English and job skills by providing them with training.

The Hawthorne neighborhood welcomed this cozy, stylish ramen house at the end of January. The pint-sized space features dim lighting, glowing lanterns, and red accents. Besides ramen, the spot serves dishes like chicken karaage and gyoza.

Two Hands Fresh Corndogs List
This Los Angeles chain known for its signature Korean-style corn dogs (which are dipped in rice flour batter and fried for a chewy-crispy effect) recently opened its first Oregon location in Hillsboro. Topping options range from sweet ranch to hot Cheetos powder to crispy puffed rice.

This upcoming food cart pod is slated to open in a former US Bank space in Woodstock later this spring, likely by April or May. The pod is expected to host around 18 regular carts, in addition to a few rotating ones.

The moody supernatural-themed cocktail bar housed in a converted Victorian house revealed this week that it will close its doors on February 19. However, there might be good fortune in the space's future after all: A mix of owners from Hey Love List , Victoria List , and the Palm Springs-based resort Villa Royale plans to take over the location.
