If you've been on the natural wine train, you've probably heard some talk of "pét-nat." Also affectionately referred to as "nature's champagne" or "hipster bubbles," pét-nat is an (adorable) abbreviation of the French term pétillant naturel, which loosely translates to "naturally sparkling." In an ancient French technique known as methode ancestrale, it's bottled while still undergoing its first round of fermentation.
