Named after the late Seattle sportsman and entrepreneur (who used to run a famous restaurant of the same name in the same location) during the early 20th century, this "casual, lively" establishment inside the recently renovated State Hotel has an old-timey Americana vibe. The menu includes updated American classics like avocado toast, tuna confit on toast, fried chicken, and grain bowls, with cocktails like the "Hail, Columbia!" (vodka, rosemary, amaro limoncello, citrus) and the "Paris Between the Wars" (Scotch, Campari, honey, lemon, cider).
