The Herbfarm was dogmatic about hyper-local/seasonal ingredients and artisanal producers long before it became de rigueur. A wine-cellar open house and garden tour—meet the pigs!—precede the single-seating prix-fixe dinner, with nine-course menus based on weekly themes such as “Truffle Treasure” and “A Menu for a Spring Forager’s Dinner.” Decor is of the old-fashioned, fussy variety, and the meal costs $200-plus per person and lasts four or five hours. While the Herbfarm has been sometimes said to be the apex of Northwest cuisine, those who dislike proselytizing and frilliness are in for a long evening; everyone else probably won’t want it to ever end.
