Go ahead, let out an exhale: There's only a handful of hours between you and Memorial Day weekend. If you're staying in town and want to luxuriate in some edible delights, read on for some of the latest openings, from Javi's Breakfast & Lunch to Tito's Taquitos' new brick-and-mortar on Swan Island. The team behind Hillsboro's Antojitos House debuted this new Venezuelan spot on May 19, serving specialties such as empanadas, pabellón, fried ice cream, and (of course) arepas.

Owner and pastry chef Fabiola Medina creates whimsical personalized cakes at this new specialty bakery, which opened in Hillsboro earlier this month.

Alas, the beloved noodle emporium Pho An Sandy List is no more, but this new diner opened in its place yesterday, slinging omelets, French toast, chilaquiles, pancakes, and other brunch favorites.

Little Bitter Bar List
Following the opening of their new Italian cafe and restaurant Grand Amari List last week, Olympia Provisions co-owners Nate Tilden and Elias Cairo launched this adjoining cocktail lounge on Wednesday, offering spritzes, antipasti, and pizza with a dough recipe first conceived at the erstwhile Cafe Castagna List  (Tilden and Cairo met while working at Castagna).

Tito's Taquitos List
Anthony La Pietra, the owner of the hand-rolled taquito truck Tito's Taquitos, unveils his first-ever brick-and-mortar on Swan Island today. The original cart will remain in its current spot—La Pietra also hopes to open a second cart at Breakside Brewing’s upcoming cart pod.

This retro '50s-inspired diner called it quits on Monday. The business had previously suffered from vandalism and staffing challenges.

Laurelwood Brewing discontinues full-service restaurant
Citing increased costs, the award-winning brewery Laurelwood Brewing List announced on Wednesday that its flagship pub will transition to counter-service only, with a pared-down version of the previous menu and a smaller staff. The spot will close for the day on June 8 to prepare for the reopening.

Lauro Romero named chef at the Ritz-Carlton
The swanky downtown Ritz-Carlton hotel revealed this week that Clandestino owner Lauro Romero will be joining the team at its upcoming 20th-floor restaurant Bellpine, alongside executive chef Pedro Almeida. Bellpine will highlight Pacific Northwest ingredients, with dishes like Oregon purple uni with potatoes and egg or sockeye salmon with rosewater.

Spring into Pet Nats Past Event List
If you've been on the natural wine train, you've probably heard some talk of "pét-nat." Also affectionately referred to as "nature's champagne" or "hipster bubbles," pét-nat is an (adorable) abbreviation of the French term pétillant naturel, which loosely translates to "naturally sparkling." In an ancient French technique known as methode ancestrale, it's bottled while still undergoing its first round of fermentation. Get to know some fun pét-nats at "Portland's weirdest wine shop and bar," which will present five of its favorites for tasting.

Indie Wine Mixer Past Event List
What better way to spend your Memorial Day weekend than sipping wine? Hosted at McMinnville's historic Bindery event space, this festival uplifts 20 different pint-sized producers, including Approachment, Arabilis Wines, De La Boue, Jackalope Wine Cellars, Mijita Wine Company, Sunshine Effect, and more. In honor of Memorial Day, 5% of ticket sales will be donated to the Heroic Hearts Project and the Foundation For Women Warriors.

Calling all aspiring oenophiles: If you know you like wine but wish you knew more about it, Arden owner and sommelier Kelsey Glasser is here to help with a series of interactive, in-person classes to boost your savvy and confidence. On Sunday, May 28, she'll team up with wine expert Sergio Licea of Flor Wines to help you define your wine likes and dislikes and how to communicate them clearly, so you can seek out wines you enjoy and are never at a loss for words in a bottle shop ever again.
