What It's Called: Pesto Paradise
What's On It: Grilled, sliced chicken thighs tossed with sun-dried tomato and pistachio pesto, with Calabrian aioli, arugula, and a squeeze of lemon, served cold on toasted ciabatta
What They Say About It: Step into spring with us a little bit early, and let us take care of the grilling for you. The rain can sit atop you outdoor grill a tad longer. Pesto can be used in a variety of ways, and one of my favorites is tossing grilled chicken in fresh pesto and using it on a salad/sandwich or a bowl of pasta. The Calabrian aioli kicks the heat up a notch, and the arugula with lemon keeps it fresh. Czech yourself before you wreck yourself and cozy up to the fireplace with our pilsner.
